  • Potatoes & Seasoning:

    • 45 medium potatoes, cut into wedges
    • 1/4 cup olive oil
    • Juice of 1 lemon
    • 1 tsp dried thyme
    • Additional garlic cloves, whole (optional)
    • Salt and pepper to taste

Instructions

  • Prepare the Meatballs: In a large bowl, combine the ground beef or lamb, breadcrumbs, chopped parsley, onion, garlic, egg, oregano, salt, and pepper. Mix until fully combined, then form the mixture into about 15 small meatballs.

  • Arrange in the Baking Dish: Preheat your oven to 400Β°F (200Β°C). In a large baking dish, arrange the potato wedges and sprinkle with olive oil, lemon juice, thyme, salt, and pepper. Toss to coat. Place the meatballs on top of the potatoes and tuck in additional garlic cloves if using.

  • Bake the Dish: Bake in the preheated oven for about 30-35 minutes, or until the meatballs are cooked through and the potatoes are tender and golden.
