Ingredients

  • 34 ripe tomatoes, cut into wedges or halved if using cherry tomatoes
  • 1 small red onion, thinly sliced
  • A handful of Kalamata olives, pitted
  • 200g feta cheese, crumbled or cubed
  • Fresh oregano (or dried, if preferred)
  • Juice of half a lemon
  • 23 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Prepare the Vegetables: Slice the cucumber, halve or quarter the tomatoes, and thinly slice the red onion.
  • Add the Olives and Feta: Scatter the olives and feta cheese over the vegetables.
  • Dress the Salad: Drizzle with olive oil and lemon juice. Season with salt, pepper, and oregano.
  • Toss and Serve: Gently toss the salad to combine all the flavors. Serve immediately.
