  • 1 cup beef stock
  • 2 tbsp flour (for gravy)
  • 4 eggs (for Yorkshire pudding)
  • 200g plain flour (for Yorkshire pudding)
  • 200ml milk (for Yorkshire pudding)
  • 50ml water (for Yorkshire pudding)

Instructions

  • Prepare the Beef: Preheat the oven to 220Β°C. Rub the beef with olive oil, thyme, salt, and pepper. Place it in a roasting pan and roast for 20 minutes at 220Β°C.
  • Roast the Vegetables: Add the potatoes and carrots to the pan with the beef after 20 minutes. Drizzle with olive oil, season with salt and pepper, and roast for another 40 minutes at 180Β°C.
  • Yorkshire Puddings: While the beef is roasting, make the Yorkshire pudding batter by whisking eggs, flour, milk, and water together. Let the mixture rest for 15 minutes. Pour into a preheated oiled muffin tin and bake for 25 minutes at 220Β°C until golden and risen.
  • Make the Gravy: Once the beef is cooked, remove it from the pan and rest it under foil. In the same pan, add the beef stock and flour. Whisk over medium heat until thickened into a rich gravy.
  • Serve: Slice the roast beef and serve with roasted potatoes, carrots, Yorkshire puddings, and gravy.
