- 500g beef chuck, cut into chunks
- 200g fresh mushrooms, sliced (button or cremini mushrooms work great)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 500ml beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- Fresh herbs (like thyme or rosemary)
- Salt and pepper, to taste
- 2 tbsp vegetable oil
Instructions
- Heat the Oil: Start by heating 2 tablespoons of vegetable oil in a large pot over medium-high heat.
- Brown the Beef: Add the beef chunks to the pot and brown on all sides, sealing in the juices. Once browned, remove the beef and set it aside.
- Sauté the Aromatics: In the same pot, add the chopped onions and minced garlic. Sauté until the onions become translucent and fragrant.
- Thicken with Flour: Stir in 2 tablespoons of flour and cook for an additional minute to help thicken the stew.
- Combine and Simmer: Return the browned beef to the pot and add the mushrooms, beef broth, tomato paste, and Worcestershire sauce. Stir everything together and bring it to a boil.
- Add the Herbs: Toss in your fresh thyme or rosemary. Reduce the heat to a simmer, cover, and cook for 1.5 hours until the beef is tender.
- Season and Thicken: Season with salt and pepper to taste. If you prefer a thicker stew, let it cook uncovered for the last 30 minutes.

- For Slow Cooker: You can transfer everything to a slow cooker after browning the beef and sautéing the onions. Cook on low for 6-8 hours.
- Freezing Leftovers: This stew can be stored in the freezer for up to 3 months. Just make sure it’s fully cooled before freezing.
