Ingredients
Scale
- 1 1/4 cups all-purpose flour
- 1 1/4 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs, room temperature
- 2 tsp pure vanilla extract
- 1/2 cup buttermilk, room temperature
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, cream together the butter and sugar until light and fluffy (about 5 minutes).
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients in three parts, alternating with the buttermilk. Stir until just combined.
- Fill the cupcake liners two-thirds full and bake for 20-23 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a tangy twist, you can use kefir instead of buttermilk.
- These cupcakes are great with a simple buttercream frosting or chocolate ganache.
