Description

This Creamy Rice Pudding is the perfect dessert to satisfy your sweet cravings. Made with simple ingredients like rice, milk, and sugar, it’s a comforting, warm treat that brings back childhood memories. The richness of the brown sugar, a hint of cinnamon, and the bursts of sweetness from the raisins make this rice pudding stand out. Serve it warm for a cozy dessert or chilled for a refreshing treat.

Ingredients

Scale
  • 2 1/2 cups (600ml) whole milk πŸ₯›
  • 1/3 cup (66g) uncooked short-grain white rice 🍚
  • Pinch of salt πŸ§‚
  • 1 large egg πŸ₯š
  • 1/4 cup (50g) dark brown sugar 🍬
  • 1 teaspoon vanilla extract 🍦
  • 1/4 teaspoon cinnamon 🌿
  • 1/3 cup (40g) raisins πŸ‡

Instructions

  • Cook the Rice: In a medium saucepan, combine the milk, rice, and salt. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for about 25-30 minutes until the rice is tender and has absorbed most of the milk.
  • Prepare the Egg Mixture: In a small bowl, whisk the egg and brown sugar together until smooth. Slowly add 1/2 cup of the hot rice mixture to the egg mixture, whisking constantly to avoid scrambling the eggs.
  • Combine and Thicken: Pour the egg mixture back into the saucepan with the rice. Cook over low heat, stirring continuously, for 5-7 minutes, until the pudding thickens.
  • Add Flavors: Remove the saucepan from heat and stir in the vanilla extract, cinnamon, and raisins. Mix well to incorporate all the flavors.
  • Serve: You can serve the rice pudding warm or let it cool and refrigerate it for at least an hour to enjoy it chilled.

Notes

  • For extra creaminess, you can use Arborio rice.
  • If you prefer a sweeter pudding, you can increase the brown sugar to 1/3 cup.
  • This pudding can be stored in the fridge for up to 3 days. Reheat with a splash of milk if it becomes too thick.
