Ingredients
Scale
- 2 1/2 cups (600ml) whole milk π₯
- 1/3 cup (66g) uncooked short-grain white rice π
- Pinch of salt π§
- 1 large egg π₯
- 1/4 cup (50g) dark brown sugar π¬
- 1 teaspoon vanilla extract π¦
- 1/4 teaspoon cinnamon πΏ
- 1/3 cup (40g) raisins π
Instructions
- Cook the Rice: In a medium saucepan, combine the milk, rice, and salt. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for about 25-30 minutes until the rice is tender and has absorbed most of the milk.
- Prepare the Egg Mixture: In a small bowl, whisk the egg and brown sugar together until smooth. Slowly add 1/2 cup of the hot rice mixture to the egg mixture, whisking constantly to avoid scrambling the eggs.
- Combine and Thicken: Pour the egg mixture back into the saucepan with the rice. Cook over low heat, stirring continuously, for 5-7 minutes, until the pudding thickens.
- Add Flavors: Remove the saucepan from heat and stir in the vanilla extract, cinnamon, and raisins. Mix well to incorporate all the flavors.
- Serve: You can serve the rice pudding warm or let it cool and refrigerate it for at least an hour to enjoy it chilled.
Notes
- For extra creaminess, you can use Arborio rice.
- If you prefer a sweeter pudding, you can increase the brown sugar to 1/3 cup.
- This pudding can be stored in the fridge for up to 3 days. Reheat with a splash of milk if it becomes too thick.
